I have been trying to find a recipe for nut cottage cheese and so far am unsuccessful. But then again, I've only tried different sites and a few recipe books I have at home.
Wish I could help - I can give you a recipe that I found in The 12 Steps to Raw book: Nut or Seed Cheese 2 cups any nuts or seeds soaked overnight 1 1/2 cups pure water Soak the nuts and seeds in pure water overnight. Drain and rinse the nuts and seeds. Put into blender with one cup of pure water and blend well to break the nuts down into a fine cream. Pour into sprout bag. Hang the sprout bag over a sink or bowl (to pour off the whey) and let ferment at room temperature for approximately 8-12 hours. Transfer cheese to a bowl, mix with your favorite seasonings and stir well. Yield 1 pint. Keeps for at least 7 days in a covered container in the refrigerator. To flavor seed cheese you may use any combination of the following: garlic, lemon juice, chopped fresh cilantro, Bragg's Liquid Aminos or Namu Shoy, curry powder, chopped or dry parsley, chopped or dry dill, sun-dried tomatoes, chopped scallions, basil, olive oil, sea-salt.
